But if you meant two of the same instrument, such as two violins on the same staff then you change between them using the shortcut Ctrl _ Alt _ 1 for voice 1, Ctrl _ Alt _ 2 for voice 2, etc.
So if you select some notes in normal mode and then press Ctrl + Alt + 2 it will move those notes into voice 2. I think to write into voice to you need to be in note input mode then press Ctrl + Alt + 2 and start writing the notes you want and they will be in voice 2.

You can't really add multiple instruments on a single staff. If you're going to write something for multiple instruments, each instrument requires its own stave. That being said, in certain situations, maybe percussion or a flutist switching to piccolo in the middle of a piece, there is a way to indicate an instrument change mid piece on the same staff, but I forget how it's done.
