Brandon,
I agree that 3 hours is way too long for a theory class. After the first
hour and a half, you should be ready to go home and absorb all the material,
with an ice-pack on your head to relieve swelling of the brain.
If this instructor is just pulling analysis materials out of the air like
that, and across periods and genres, he's not even following the curriculum.
Your first three years of theory should be learning from the Classical
masters. Only in the fourth semester should jazz make an appearance, after
Debussy and Stravinsky and Schoenberg and the other 20th century masters set
the stage for jazz theory. I mean, how are you expected to understand
harmonic extension without a primer in the Romantic period?
I hope you get into the University of the Pacific. The accessibilities
services is awesome and the music faculty are wonderfully helpful.
