Do professors usually request fancy printing for say, theory assignments?
Also, what music editing feature differences are their between these two
products?

Regarding Sibelius, as I understand it, yes, there are scripts that make it
usable. The current scripts are for version 5, and the current version
Sibelius sells is 7. We have been eagerly waiting for scripts for version
6, which has a "magnetic" feature that will solve some problems for blind
people in making sure music parts don't run into each other on the page.
Many schools are one or two versions behind, but 7 has been out for a while
now and probably most schools have it.
As a mainstream program, access is not as straightforward as with Lime and
will probably require more time and patience to learn, and some initial
frustration. Blind studens at the Berklee College of Music use it in their
lab, but they also still need Lime and GOODFEEL.
The main advantage of using Lime and GOODFEEL is that, if you have a braille
display, you can read the music as you enter it immediately on the braille
display. Also, the process of brailling music from Lime is seamless,
whereas with Sibelius, you will need to do at least one more conversion
step, and the resulting braille you get may not be accurate.
So the choice is between using something that lots of people know, which may
not work fluently for you and doesn't provide braille support, or using Lime
and GOODFEEL, , which has fewer features for music editing and fancy
printing, but does provide maximum independence and braille right away.

I know about Goodfeel as a very viable option, but I was completely unaware
that Sibelius was even accessible with scripts.
I'm interested in continuing to learn everyone's opinions about both
options.

Braille music into print? By that I assume you just mean producing print for
sighted people. The two options you have are Lime with Lime Aloud, or
Sibelius 5.25 with the Sibelius Access scripts. For putting things into
Braille, your option is Goodfeel. That's it.
