You can Actually set Lime up to trigger different instrumental sounds for each staff.  Use the templates provided or create your own.  You set each staff to one of 16 MIDI channels with ALT+V, C and you choose the sound with ALT+A, X, I.

How is Sibelius? I’ve never used it before. Do you know how it compares with lime?

I think Lime is rather simple. The input method is by playing on the qwerty keyboard a piano or hooking up a Midi controller. You can add parts, labels, lyrics and all the extra symbols  very easily. You can insert measures really easy and remove measures really easy. It is rather unnerving having to make corrections as you play over what you want to change. You have to watch what length note your notes are set to. Your number row ` through = are all short-cut keys for adding slurs, making half notes, making triads and all that funk. To navigate you can move with the numpad by measure, annotation, note and you can hear certain things with navigation. You also have a jump to measure box. 

How does Sibelius differ? I’ve heard you can make different sounds in Sibelius for each part but I don’t know if this is true, I know nothing about Sibelius!
